Dom Pérignon

            Pierre Pérignon was born into a wealthy family in Sainte-Menehould in 1639. He joined the Jesuits in Chalons-en -Champagne in 1652, and took his monastic vows at the Benedictin monastery in 1658. In 1668, he was ordered by his ecclesiastical superiors to leave for Saint Pierre d'Hautvillers Abbey to restore the prestige of the champegnois wines. He was made in charge of all the vineyards and press of the Abbey.

Today he is known for his inventions and discoveries such as his wine making and blending methods that are still frequently used today.

 


Gérard Liger-Belair

Gérard Liger-Belair is a physics professor at Reims University, where he also leads a research the group Effervescence, Champagne et application, interested in the effervescence of champagne.

He researches champagne bubbles (nucleation, ascent and bursting) and their role in the taste of champagne and its aromas. He is one of the few researchers studying champagne and sparkling wines. His passion for the latter comes from his interest in photography, which can been seen in his books.

Indeed, this physicist is the author of several books such as "Bulle de champagne" written in 2005 “Effervescence et la science du champagne” and “Champagne” published in 2009, and “Voyage au cœur d’une bulle de champagne “ published in 2011. He is willing and happy to share his knowledge with the general public.
